Lemon Poppy Seed Cookies 3


I had such a fabulous time making all of these Lemon Poppy Seed Cookie themed products, I just had to share a Lemon Poppy Seed Cookie recipe. This cookie recipe is from the cookbook Baking Illustrated from America’s Test Kitchen. These cookies are soft and chewy with a fabulous lemon flavor to them. Mmm. Don’t miss out on these cookies. Collect Needed Items

All-purpose Flour
Baking Powder
Salt
Butter, Unsalted
Sugar
Brown Sugar
Eggs
Vanilla Extract
Poppy Seeds
Lemon Zest

Recipe

Recipe in Volume – Makes 24 Cookies
2 cups All-purpose Flour
1/2 teaspoon Baking Powder
1/4 teaspoon Salt
16 tablespoons Butter, Unsalted
1 cup Sugar
1 tablespoon Brown Sugar
1 Egg
1 teaspoon Vanilla Extract
1 tablespoon Poppy Seeds
1 tablespoon Lemon Zest 

1/2 cup Sugar

Recipe in Ounces – Makes 24 Cookies
10 ounces All-purpose Flour
1/2 teaspoon Baking Powder
1/4 teaspoon Salt
8 ounces Butter, Unsalted
7 ounces Sugar
1 tablespoon Brown Sugar
1 Egg
1 teaspoon Vanilla Extract
1 tablespoon Poppy Seeds
1 tablespoon Lemon Zest 

1/2 cup Sugar

Recipe in Grams – Makes 24 Cookies
283.5 grams All-purpose Flour
1/2 teaspoon Baking Powder
1/4 teaspoon Salt
226.8 grams Butter, Unsalted
198.4 grams Sugar
1 tablespoon Brown Sugar
1 Egg
1 teaspoon Vanilla Extract
1 tablespoon Poppy Seeds
1 tablespoon Lemon Zest 

1/2 cup Sugar

Preheat oven to 325° F. Prepare a baking sheet by using parchment or nonstick cooking spray. In a bowl, cream the butter, sugar and brown sugar together until light and fluffy. Add the lemon zest, egg and vanilla to the mixture. Blend well. Add the dry ingredients and mix until combined. In a separate bowl place the 1/2 cup of sugar. Fill a second bowl with cold water. Dip your hands in the water and shake off the excess. Roll a heaping tablespoon of cookie dough into a ball. Roll the ball of dough in the bowl of sugar and place on a baking sheet. Continue with the rest of the dough. Take a drinking glass and spread a little butter on its base. Use the glass to flatten the cookies until they are 3/4 inch thick, dipping the glass in the sugar to prevent sticking. Bake until the edges are golden brown, 15 to 18 minutes. Remove the cookies from the oven and allow to cool. Enjoy!

    I am so glad you love this recipe. Aren’t those cookies scrumptious? I think I need to make a batch after work now. (If I make them at work, I will not see a single cookie!)

    Hmn. I also have a birthday this week. What a nice treat for my father’s 50th birthday, don’t you think? After all, you only turn 50 once!
